Party prep

I have been asked (hired, even!) to make cupcakes for a birthday celebration.  The current plan is for three kinds of cupcakes...chocolate with vanilla buttercream, sour cream cuppies with maple whiskey frosting (copy cat from Cupcake Royale), and Boston cream cupcakes.  The chocolate and whiskey cuppies should be pretty easy, but I am a bit nervous about the Boston cream.  I am not sure if I should try to pipe in the filling, or scoop out cupcake from the center as directed in the recipe.  I feel like they might fall apart!  Either way, I will have PLENTY.  To the market tomorrow and start baking on Thursday. Wish me luck!



UPDATE!

The cupcakes turned out great!  They were loved by all!  For the Boston Cream I ended up piping the cream into to cupcakes until they started to swell a bit (it was kind of fun!) and it worked perfectly.  I was so proud that I was able to make the cream filling from scratch!  The chocolate ganache for the top was not as great as I'd hoped, though.  I think the best cupcakes were the whiskey maple, although they were the most unattractive.  I'm a sucker for plain and simple, so I like the chocolate with vanilla buttercream and rainbow sprinkles, of course.
